I had the pleasure of visiting Lufa Farms open house this summer, the world’s first commercial rooftop greenhouse in Montreal! I was so impressed by Lufa’s farm unique, smart, energy efficient, urban greenhouse space nestled on a rooftop of an industrial building. I love how they have reinvented the wheel with various hydroponic methods of agriculture and have found a way to provide our Montreal community with highly nutritious, high quality organic vegetables all year round.
With Fall soon approaching I feel so grateful to have Lufa Farms present in Montreal and that our community is blessed with an option to have healthy delicious baskets, especially in the colder months, delivered to us. Directions for Chard Pesto:
Mix all ingredients in a blender until relatively smooth
Some ideas for using pesto: Spread it on sandwiches, Heat it up in the pan before cooking an omelet, Mix it with pasta (hot or cold salad), Give it as a gift to your mother, brother or neighbour, Freeze it in an ice cube tray for later use.
