Cauliflower Mash

What most people don’t realize, is that although potatoes have been rooted as a healthy choice, they are very starchy. I’m sure I have mentioned that potatoes actually spike blood sugar levels higher then sugar! Most people do enjoy mashed potatoes and everything else potato, so this recipe is to show you a potato alternative, that carries the same texture and look as the real deal. However, this is way better! This recipe comes from Eva Cabaca. I have also included a vegan gravy which is yum!

What You Need

  • 1 cup millet or qunioa, millet just is similar in colour to potatoes. Either works
  • 2 cups cauliflower
  • 3 cups water
  • 1 tea spoon Celtic sea salt or Himalayan rock salt
  • 2-3 cloves garlic
  • 1/2 tea spoon of kelp powered (optional)
  • 2-4 table spoons of any healthy oil of choice, cold press olive, flax, sunflower or hemp

What You Do

  • Rinse the millet or quinoa and in a large pot add the water, salt, garlic and kelp and bring to a rapid boil
  • Add the cauliflower, cover and simmer for 30 minutes
  • Once all the water is gone you can mash! you can use a hand masher. If you want a smoother consistency you can use a hand blender or food processor.
  • Top with gravy or leave it on the side.
  • Use fresh chives or parsley to garnish

Groovy Gravy Simple and idiot proof! What You Need

  • 1 table spoon of dark miso paste
  • 2 table spoons of tahini
  • 1/2 cup of freshly squeezed orange juice

What You Do

  • Combine and mix all together
